How do I train my dog to catch and kill little 'varmints' like weasel and ferrets?

I live in New Zealand, and the ferrets and stoats around where I live are becoming a problem. They're killing my poultry. I have a few mutt dogs descended from herding and hunting stock. How do I train them to catch these swift little 'varmints'. Lol, love saying that American word.
